Sugar Free Mango Coconut Muffins
3 cups self-raising flour
½ cup Natvia Natural Sweetener
¾ cup desiccated coconut
1 ¼ cup coconut milk
2 eggs, lightly whisked
150g butter, melted
350g mango, diced into small cubes
- Step 1
Preheat oven to 180ºC. In a bowl, combine flour, Natvia and desiccated coconut and stir to combine.
- Step 2
Make a well in the centre and add coconut milk, eggs and melted butter. Stir mixture until just combined.
- Step 3
Add chopped mango, and stir again lightly to disperse fruit through the batter.
- Step 4
Bake for 20-25 minutes until an inserted skewer comes out clean. Allow to cool for 10 minutes on a cooling rack before serving.
